Wild Boar Ragù with Pappardelle

  • 1 lb wild boar meat, diced
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 1 can (14 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 12 oz pappardelle pasta
  • Grated Parmesan cheese for serving
  • Fresh parsley, chopped (for garnish)


  1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium heat.
  2. Add diced wild boar meat to the pot and brown on all sides, about 5-7 minutes. Remove the meat from the pot and set aside.
  3. In the same pot, add chopped onion, diced carrots, and diced celery. Sauté until vegetables are softened, about 5 minutes.
  4. Add minced garlic to the pot and cook for an additional minute until fragrant.
  5. Return the browned wild boar meat to the pot. Pour in red wine and cook until it has reduced by half, scraping up any browned bits from the bottom of the pot.
  6. Stir in crushed tomatoes, tomato paste, dried thyme, and dried rosemary. Season with salt and pepper to taste.
  7. Bring the ragù to a simmer, then reduce the heat to low. Cover and let it simmer gently for 2-3 hours, stirring occasionally, until the meat is tender and the flavors have melded together.
  8. While the ragù is simmering, cook the pappardelle pasta according to the package instructions until al dente. Drain the pasta and set aside.
  9. Once the ragù is ready, serve it over cooked pappardelle pasta. Garnish with grated Parmesan cheese and chopped fresh parsley.
